He has also hosted pop-ups in NYC, including at the restaurant Tsismis. 
 
Among his standout creations: tinola terrine free range chicken with crispy ginger, patis pearls; sous vide pork belly binagoongan and fried eggplant logs served on a puree of Bicol express; and singkamas sorbet, green mango ice cream with candied bagoong pop rocks. Hungry yet?
